Hotta for Frittata

I made a frittata for the first time yesterday morning and I truly couldn't believe how great it turned out.

See, I'm not a baker. At all. I mean can't bake a lick. So the fact that this was edible from top to bottom was pretty amazing...

And the fact that it tasted good was the icing on the cake. Or the cheese on the eggs...Whatever.

Anyway, I used things I already had on hand which included an onion & 2 cloves of garlic (both sauteed), 8 eggs, a bag of spinach, a bit of cheese, salt, & pepper (all of which I mixed in a bowl before adding to the cast iron skillet with the onions and garlic).

I gave it all a quick stir and put the skillet in a preheated 400 degree oven for 14 minutes (though I peeked at 9 and 12 minutes to make sure it wasn't overcooked).

The result was pretty to eat and look at.
